I’m runnning the latest parrot OS I think 5.0.1. Suddenly my desktop environment changed and I have no clue how to change it back to the original one. Please see the attached screenshot.

Look like mate has something crashed (common problem. That’s why i changed from Mate to XFCE 2 years ago).
It’s great if you can check error logs and send here or Mate’s github
Make sure you have parrot-desktop-mate installed. If you apt installed something like mate-desktop-environment (metapackage), it will remove/change the Parrot desktop/panels/menu. That happened to me long ago.
Actually all settings are in the dconf
data base so metapackage won’t affect this unless you remove a package that install plugins
